Here are some of the meals I've made in the last couple months.

Red pepper and muenster omelet, bacon, mixed fruit, and skillet sweet potatoes
Corned beef, cabbage, carrots, and potatoes for St. Patrick's Day. The corned beef was so tough! Next year I'll try again with hopefully better results.
What's-left-in-the-fridge "Mexican" soup with avocado and cilantro
Smoky bacon chili - I added a box of chicken stock to make it more of a soup.
I made vegetable stock for the first time! It was so easy and flavorful. I used this with a pot roast.
Buffalo chicken and potato bake with green beans
Lemony garlicky kale with sausage
Spinach salad with tomatoes, mozarella, cranberries, and pomegranate vinegar
