Louisville Loves - Lil Cheezers


One of the things I love about Louisville is that there are getting to be more and more options for gluten-intolerant people, as well as people who don't eat grains (like myself). I have been pleasantly surprised time and time again by not only restaurants being willing to work with my diet, but also our food trucks being super accommodating (e.g., Grind offering "salad style" burgers). Although I'm not 100% Paleo, I do not eat grains or legumes so I'm constantly having to be creative with my dining-out choices. 

Last night was the monthly Moth StorySLAM, and I was initially very hesitant when I saw that the featured food truck was Lil Cheezers. This was mainly because I assumed that a gourmet grilled cheese truck would not have anything I'd be able to eat. 


As you can see, Lil Cheezers has a ton of interesting options for grilled cheese sandwiches (this is not their full list - here's their online menu). I usually try to avoid looking at them because they might be too tempting. However, last night I was really hungry and thought it wouldn't hurt to ask if they could just put the toppings on their fries instead of bread. The woman who took my order said that it wouldn't be a problem at all and pretty soon I had some Philly-style fries with roast beef, sauteed green peppers and onions, and melted cheddar cheese! 


You may be thinking, "Emily, you're not supposed to eat white potatoes or dairy or refined foods with Paleo," or "Wow, that looks amazing!" at this point. My answers are as follows:
- I'm not 100% Paleo...I'm sticking with the no grains and no legumes for now. I try to eat less refined food, but I do not stress out about it.
- Yes, it was very good! I recommend checking out Lil Cheezers if you see them around town or at an event.

I definitely look forward to trying out more of the options in the future! Also, Lil Cheezers does have a physical location in addition to their food trucks. A little bird last night told me they may or may not have house-made fries at that location...Does anyone know?
